On Friday, Nov 15th, PHS Culinary Class had a guest speaker and demo from Chef Kealan O’Boyle from US Foods.
Chef Kealan went to culinary school at New England Culinary Institute in Vermont. Born and raised in Kansas City, but gained experience working in most aspects of the culinary world, in various types of restaurants in Texas, Missouri, Illinois, Vermont, and Massachusetts. Since moving back to Kansas City, he was Executive Chef at Mass St. Fish house and opened Freestyle Poke. Kealan specializes in new restaurant openings and is driven to provide inspirational menu ideas keeping restaurants trendy and relevant while also assisting operators in implementing impactful operational procedures to ensure their future success.
Students discussed the different techniques being used and the many opportunities in the industry. After a lesson in plating a dish, students enjoyed a delicious Risotto topped with fall vegetables and salmon. For dessert, a delicious cheesecake
Chef Anthony shared that this was a unique opportunity for the students. "It is very hard to get time with these chefs. They are some of the best in their areas of operations."
